Baked Pumpkin with Halloumi

Have you ever heard of Baked Pumpkin Halloumi before?!! sounds delicious!

Now is pumpkin season and time for fall classic recipes. But let’s try a new simple, non-desserty, and non-soupy pumpkin recipe.

For sure you know, the best way to cook a pumpkin is to bake or roast it with olive oil and Italian herbs.
But did you know with fried halloumi cheese you can turn your simple and boring baked pumpkin into an amazing yumminess?

Baked Pumpkin Halloumi

I’m a cheese lover, you probably can guess from all those cheesy recipes. I really like fresh Mozzarella cheese and then Halloumi cheese.

 

How should halloumi be cooked?
Halloumi can be prepared in a variety of methods, including pan-frying, grilling, barbecuing, and baking.

I like my Halloumi cheese thin and crispy, especially with baked pumpkin… a great combination.

If you do not have halloumi cheese, Instead add parmesan cheese and Enjoy.

It’s all about tasting new flavors.

To make this recipe vegan or dairy-free, leave out the halloumi cheese or replace it with a suitable dairy-free cheese replacement.

Baked Pumpkin with Halloumi

Baked Pumpkin with Halloumi

Prep Time 12 minutes
Cook Time 30 minutes
Course Dinner
Servings 2

Ingredients
  

  • 90 g Halloumi sliced
  • 1/4 Pumkin peeled, cubed
  • 2 tbsp Olive oil
  • 2 tbsp Italian herbs
  • Salt and pepper

Instructions
 

  • Preheat oven to 180C / 350F.
    Chop pumpkin, peel, seeds remove and thinly slice.
    In a medium bowl add cubed pumpkin, olive oil, Italian herbs ,salt and pepper.
    Mix them well.
    Bake 18-20 minutes, until turn light brown.
    Meanwhile, Over medium high heat, in a frying pan fry halloumi pieces for about 2 minutes on each side.
    Serve together and enjoy.
