Instructions
In a bowl, combine the black beans, red onion, cilantro, ground chili powder, salt, and pepper. Mix well to ensure all the flavors meld together.
Place a flour tortilla on a flat surface and spread a generous portion of the bean mixture evenly over half of it. Sprinkle a generous amount of shredded cheddar cheese on top.
Fold the tortilla over to create a half-moon shape, pressing down gently. Repeat the process for as many quesadillas as you desire. In a skillet over medium heat, add a touch of olive oil or use cooking spray. Cook each quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted to perfection.
Remove the quesadillas from the skillet and let them cool for a moment before slicing into wedges. Garnish with additional cilantro or your favorite toppings.
