If you live in a dorm and do not have a stove, you can use refried beans ( pre-cooked and mashed beans)and make your life easier. Then add cheese and heat in a microwave for 3o seconds or a minute.

Since my canned bean is in smokey tomato sauce has all those amazing flavors already, it saves time, and no need for any extra seasoning. But if your beans are plain just serve it with salsa.

Ingredients
  

  • Flour tortillas
  • 1 can of black beans drained and rinsed
  • 1 cup shredded cheddar cheese or your favorite melting cheese
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Olive oil or cooking spray

Instructions
 

  • In a bowl, combine the black beans, red onion, cilantro, ground chili powder, salt, and pepper. Mix well to ensure all the flavors meld together.
  • Place a flour tortilla on a flat surface and spread a generous portion of the bean mixture evenly over half of it. Sprinkle a generous amount of shredded cheddar cheese on top.
  • Fold the tortilla over to create a half-moon shape, pressing down gently. Repeat the process for as many quesadillas as you desire. In a skillet over medium heat, add a touch of olive oil or use cooking spray. Cook each quesadilla for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted to perfection.
  • Remove the quesadillas from the skillet and let them cool for a moment before slicing into wedges. Garnish with additional cilantro or your favorite toppings.
