- Chop mushrooms- Now crack two eggs in a bowl and whisk together until mixed well.- Start by heating a pan over medium heat. spray olive oil.- Add chopped mushroom.- Sauté for about 6-7 minutes or so until lightly browned and tender.- Season with salt and pepper and set it aside.- Now heat a small pan and melt the butter and roll it around to coat the bottom of the pan. - Add eggs to the pan and add the lid on. - Now gently move the eggs around the pan as they begin to set up.- Continue until your eggs are almost cooked.- Now add cooked mushrrom onto one half of your omelet and add cheese over the top. - Now it’s time to fold the omelet onto itself to create a half-moon.- Add a lid on and let sit for a minute or so to cheese melt well. - Then serve it with leftover veggies and enjoy.
