Prepare the Sausages:
If the sausages are in casings, remove them and crumble the sausage meat into bite-sized pieces.
Sauté the Onions:
Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
Add the thinly sliced onions and cook until they become golden brown and caramelized, stirring occasionally. This may take about 15-20 minutes.
In a separate pan, heat the remaining tablespoon of oil.
Add the sausage meat and minced garlic. Cook until the sausages are browned and cooked through.
Add the turmeric, smoked paprika, salt, and black pepper to the sausages. Mix well to coat the sausages in the spices.
Add the tomato paste and cook for another 2-3 minutes, allowing the flavors to meld.
Combine the sautéed onions with the spiced sausages. Stir well and let it simmer for 5-7 minutes, allowing the flavors to meld.
Serve: Transfer the Sosis Bandari to a serving dish, garnish with chopped fresh parsley, and serve hot.
