Easy Chicken Pad Thai

Ingredients
  

  • 1 Package Rice noodles
  • 2 chicken breast
  • 1 tsp. red pepper flakes
  • 2 cloves garlic finely chopped
  • 2 cups chopped carrot
  • 2 cups chopped cabbage
  • 2 tbsp. ginger powder
  • 2 cups bean sprouts
  • 1 cup chopped scallion
  • 2 tbsp. sesame seeds
  • 1 egg
  • ½ cup finely chopped peanuts for garnishing
  • "!For sauce:"
  • 2 tbsp. soya sauce salty
  • 2 tbsp. honey
  • Juice of 1 lime
  • 1 tbsp. peanut butter
  • 1 tbsp. garlic powder

Instructions
 

  • Over medium-high heat, in a frying pan, add 2 tablespoons of oil and sauté chopped garlic.
  • Then add chopped carrots, cabbages, and ginger powder or finely chopped fresh ginger.
  • Add 1 cup boiling water and let simmer for 6-7 minutes.
  • Meanwhile, in a large bowl, add rice noodles then add 2 cups boiling water and let them cook and soften in 6-7 minutes then rinse with cold water and set aside.
  • In another frying pan, add chicken fillet and season with red pepper flakes and salt. Let it cook for 4-5 minutes.
  • Now add bean sprouts, scallion, and cooked chicken to the pan. Stir for a minute.
  • For sauce: In a small bowl, add salty soya sauce, lemon juice, honey, peanut butter, and garlic powder, and whisk them well.
  • Then add rice noodles and sauce, and mix well together.
  • Then add sesame seeds and 1 egg, and stir well.
  • Garnish with sesame seeds, scallion, and peanuts. Serve immediately.
