Hawaiian Chicken Pineapple Kebabs, Perfect summer picnic idea…

Grilled pineapple gave these kebabs a great sweet tropical touch!

Previously if any of our friend order Hawwian chicken pizza or burger with grilled pineapple and wants to share, I said heck NO. Pineapple is a great fruit but not as part of any dishes. 😀
But living in Southeast Asia for several years, change our taste. Now we like sweet and spicy dishes.

Also, red onion adds great taste but must be careful as onion burn so fast.

Ingredients
  

  • 2 chicken boneless breast
  • 1/2 cup tomato puree
  • 2 tsp. olive oil
  • 2 tsp. lemon juice
  • 2 tsp. paprika
  • 1 tbsp. ginger powder
  • 1 tbsp. garlic powder
  • Pinch of salt
  • Black pepper to taste
  • 1 cup cubed pineapple

Instructions
 

  • In a large bowl, whisk together tomato puree, olive oil, lemon juice, paprika black pepper, salt, garlic and ginger until fully combined.
  • Pour sauce in to the cubed chickens and mix well. Cover and put in the refrigerator at least 2 hours.
  • Preheat grill or grill pan to medium-high heat.
  • Thread chicken cubes, cubed pineapple and diced bell pepper alternately onto skewers.
  • Place skewers on preheated grill pan, and brush with reserved marinade. Cook 5-6 minutes each side until the chickens cooked well.
  • Serve with a sprinkle of cilantro.
